Outlet Black Bean Rayu, 240g Japanese Ingredients|Chinese Ingredients

White Mausu black bean rayu is a umami-rich sauce of fermented black beans. It has a slight fruitiness to start, which builds into layers of smoky savoury miso flavour. Plus there’s a lovely chilli kick from gochugaru and chilli flakes. Use the hot sauce for dressing breakfast eggs, or as a dipping sauce for dumplings and tempura prawns.

Michel Roux’s Review: ‘Other than a bottle of champagne for an emergency, the one thing I always have in my store cupboard is a jar of White Mausu black bean rayu. It’s a crispy chilli oil, and I use it as a condiment with cold or grilled meats, add it to a salad dressing or marinate fish in it. The black beans have such a depth of flavour, and the kick of chilli livens up any dish’ – Michel Roux in The Times
