Minus 8 Vinegar , 200ml Ingredients Brands|Oil, Vinegar & Dressings

Minus 8 vinegar has a rich, concentrated flavour. You can use it in all sorts of savoury recipes, as well as cocktails and desserts. It has a wonderful aroma with notes of vanilla and cooked fruit.

The vinegar is named after the temperature at which the grapes are harvested. The frozen grapes are used to make ice wine, which is then turned into vinegar. Minus 8 ages the vinegar in oak barrels to develop its complex flavour.

This small batch vinegar adds sweet-sour tang to sauces and dressings. Use it to make a classic vinaigrette for salads with bitter leaves and roasted beetroot. It’s also delicious with grilled meat, carpaccio and ripe tomatoes.

Mixologists use vinegar to add complexity to cocktails and mocktails. Minus 8 pairs their vinegar with gin and lemon-lime sparkling water to make a refreshing spritz. Garnish the drink with blueberries and cucumber ribbons.

A splash of vinegar is a surprising addition to desserts. The rich sweetness and bright acidity are a great match for ice cream and roasted peaches.
