Espelette Pepper, 40g French Ingredients|Herbs & Spices

Terre Exotique’s Espelette chilli pepper PDO is an extra special chilli powder from the Basque mountains, with aromatic, slightly spicy notes. The chilli pepper takes its name from the French village of Espelette, and it’s PDO (Protected Designation of Origin) status means the pepper has to be produced in a certain area and follow certain specifications – currently only 10 farmers hold the secret to how it’s produced!

The pepper is harvested between the end of August and October. The red fruits are oven-dried before being hung outside local houses to dry out further. The final stage of production involves the peppers being ground to a powder.

With aromas of tomato and hay, this spicy, fruity pepper is key in Southwestern French cooking – it’s added to anything from omelettes to softly scrambled eggs, roasted vegetable salads and even chocolate ganache.

How is espelette pepper used?

Traditionally Espelette pepper, or piment d’Espelette, is used as part of the curing process for Bayonne hams, as well as spicing honey or bread and even adding a kick to hot chocolate or liqueurs. Espelette is also used as the starring ingredient in lots of traditional Basque dishes – from pipérade fish stew to chicken basquaise with piperade.

About Terre Exotique

Terre Exotique works directly with hundreds of specialist farmers and producers around the world – to bring the very best peppers, spices and salts to our tables. The company was founded by Erwann de Kerros, a Breton and seasoned traveller. After tasting pepper in the Penja plantation in Cameroon, Kerros yearned to try other specialist peppers and spices – and Terre Exotique was born.

The company works closely with farmers to preserve natural habitats, and to ensure a sustainable income for local communities. Each spice is carefully packed in tins or glass jars – with no plastic. The metal tins preserve the flavours and aroma of your spice, by protecting them from sunlight. So the ingredients stay at their best for longer.

Storage: Keep at room temperature in a dry place

Espelette pepper is a delicate spice, highly sensitive to heat and light. If not stored properly, it may lose some of its vibrant colour and appear paler.
