Sweet potato starch keeps fried food crispy for longer. Make classic Chinese takeaway dishes such as battered sweet and sour chicken and crispy chilli beef – using sweet potato starch in place of ordinary flour. Or make crunchy authentic Taiwanese popcorn chicken – tossing chicken marinated in soy, mirin, ginger and egg yolk, in sweet potato starch seasoned with five spice, before frying.
