Organic cloves have a warm, pungent flavour. They’re used in a wide range of recipes, from glazed gammon to mulled wine. You can use them whole or grind them in a mortar or coffee grinder.

Mill & Mortar’s cloves are grown in a village cooperative in Sri Lanka. The harvest takes place over several days as the cloves need to be picked at precisely the right time. The nail-shaped cloves have a peppery, slightly smoky aroma.

Cloves are an essential ingredient in Chinese five spice. Their strong flavour is ideal for flavouring rich meats like beef and venison. They’re sturdy enough to be pushed into joints of meat to infuse them while they cook. Push the sharp end into a glazed ham for a subtle hint of spice

This versatile spice can also be used to flavour pickles and chutneys. They add depth of flavour to stews and casseroles. Add them to a bouquet garni to flavour sauces and soups.

Grind cloves to a fine powder to flavour spiced cakes and cookies. Try this recipe forolive oil and honey cookies.

Store in an airtight container in a dark, dry place.
